I am fairly certain that I love potatoes almost as much as Bubba Blue loves shrimp on Forrest Gump.
I love all sorts of potatoes in all sorts of forms. Russet potatoes, yellow potatoes, red potatoes, sweet potatoes, Japanese sweet potatoes, fingerling potatoes….
I love potatoes mashed, roasted, grilled, baked, twice baked, and as a child I would even eat a potato like an apple… raw. I could go on and on.
But I am not going to.
Today I want to show you how easy it is make smashed potatoes. They are pretty much in between regular baked potatoes and mashed potatoes. You get the potatoes cooked enough to be able to smash them down, but you don’t fully mash them.
Most recipes require you to boil the potatoes to soften them which can take a while, depending on how big the potatoes are. Well enter Klondike Brands Express line of potatoes. The potatoes are microwaved in the bag they come in and are steamed in just 6 minutes. Easy peasy, right?
I will occasionally buy these to have for a quick side of potatoes for a week night dinner. They come in the rose baby potatoes (which is what I used) but also goldust or smiley potatoes. Super convenient!
If you want to take these basic potatoes up a notch then turn them into Garlic Parmesan Smashed Potatoes!
Steam them in the bag, smash them down, brush garlic-butter on them, sprinkle with salt, pepper, and parmesan, and bake them 8 minutes. Boom, done. Delicious potatoes on your dinner table in 20 minutes.
Buy a couple bags of these potatoes and make them for your next dinner party. People will think you spent quite some time in the kitchen, but you’ll know the trick.
Feel free to experiment with some additional herbs and also some other cheeses. Play around. It is pretty hard to mess up a potato and cheese combo.
- 1 - 16oz package Klondike Rose Express Baby Idaho Potatoes*
- 2 Tbsp Parmesan, shredded
- 1 Tbsp grass-fed butter
- 1 bulb garlic, minced
- 1/4 tsp salt
- 1/4 tsp pepper
- Preheat oven to 400 degrees.
- Line a baking sheet with foil and spray with non-stick cooking spray.
- Cook potatoes in microwave according to package directions.
- While the potatoes cook, combine the garlic and butter in a small microwave-safe bowl. Once the potatoes are done, microwave the butter and garlic until melted.
- Spread potatoes out on the foil-lined baking sheet. Using a spatula or the bottom of a small bowl, gently smash the potatoes down until they are about 1/4 inch thick.
- Brush or drizzle the garlic-butter evenly over all the potatoes. Sprinkle each potato with salt and pepper. Sprinkle parmesan cheese evenly over all the potatoes.
- Bake potatoes for 8 minutes. Serve immediately.
- *Klondike Express Potatoes are meant to be cooked in the microwave. Do not substituting other non-Express potatoes for this recipe.
