Greek Cucumber & Tomato Salad - a quick, healthy salad that can be made in minutes! Add chickpeas, chicken, or salmon for added protein to this clean eating dish.

Donny & I started out with just one dog, Doug. It took us 2 1/2 years of marriage before we were ready to get another dog. We finally did that and adopted Kevin six weeks ago or so! Well we are in love with both dogs so much that we decided to take another dog in for a few weeks!

Well, sort of.

Donny’s brother, Andy recently got a promotion that required his family and him to move to Omaha, Nebraska. They bought a house in Nebraska, but don’t close on it until the beginning of May. In the mean time, they are going to be staying in a small, one-bedroom apartment. They thought their dog Bailey would have a really hard time with apartment-life, so we offered to keep her for a few weeks. She has stayed the night at our house before when Andy & Kasie stayed, so she & Doug have met.

Bailey is a mix between a corgi and an Australian shepherd. She is adorable and has so much energy! Hopefully she can keep Doug & Kevin busy all day so all three of them sleep at night. Kevin is afraid of all people, but luckily he loves other dogs. They will get along great. I am actually more concerned with Donny & my sleeping arrangement, than the dogs getting along. I have a feeling the three dogs are going to completely take over our queen size bed!

So I have another easy salad recipe for you. This Greek Cucumber & Tomato Salad is super quick to throw together and only requires a few ingredients. Make a batch over the weekend or during your meal prep and eat it all week long. It would be good over a bed of lettuce or mixed with chickpeas for some protein if you need to change it up.

This recipe is easy to double or even triple if you have to make a salad for a large crowd, say a BBQ or something. Try mixing it with quinoa and really impress the party!

Both tomatoes and cucumbers are low in calories, in fact, one serving of this salad is only 65 calories. There are about 6 carbs per serving and it also has 5 grams of healthy fats from the extra virgin olive oil….very waist-friendly!

A light, healthy cucumber and tomato salad seasoned with Greek seasoning. Quick to prepare and can be made for a crowd!

Salad
  1. 4 cups cucumber, chopped
  2. 2 cups cherry tomatoes, halved
  3. 1/2 medium red onion, cut into slices
  4. 2 Tbsp extra-virgin olive oil
  5. 1 bulb garlic, minced
  6. 1 Tbsp Greek seasoning*
Greek Seasoning
  1. 1 Tbsp dried basil
  2. 1 Tbsp dried oregano
  3. 1 1/2 tsp salt
  4. 1 1/2 tsp black pepper
  5. 1 1/2 tsp rosemary
  6. 1 1/2 tsp thyme
  7. 3/4 tsp ground nutmeg
Instructions
  1. Combine cucumbers, tomatoes, and onion in a large bowl. Stir to combine.
  2. In a small bowl combine the garlic and olive oil. Drizzle over cucumber mixture and stir to evenly distribute the oil.
  3. Sprinkle seasoning over vegetables and toss to evenly distribute to spices.
Notes
  1. *Store-bought Greek seasoning may be substituted.
