No Bake Peanut Butter Cookie

It is ridiculous how easy it is to make these 4-Ingredient Peanut Butter Cookies. First of all, you only have to round up four ingredients! After that, it only takes a couple minutes to get them whipped up! The hardest part is letting them harden in the refrigerator without trying to sneak a few bites!!!

Last week we had a crazy spring blizzard in Colorado. Remember that?!?! Well in the radio world we do not get snow days. However, the weather was getting crazy and visibility was getting really bad, so the Boss-Man let us go home at about 12:30pm! It was not easy trying to find my way home with several areas that were complete white-outs! Did you end up having to drive in that weather?!

I was lucky and got to follow a pick-up most of the way to my house. My car does great in the snow, but I’m honestly not 100% sure I would have stayed on the road if I hadn’t been able to follow them! It could have been very bad. So thank you random-pick-up-man. I appreciate your good driving skills!

4-Ingredient No Bake Peanut Butter Cookies

It was quite weird getting home by 1:00pm on a Wednesday. I decided to do the only logical thing with my unexpected free time: bake cookies! I made one batch of chocolate-cherry cookies that weren’t amazing. I also made these 4-Ingredient No Bake Peanut Butter Cookies which ARE amazing!

4-Ingredient No Bake Peanut Butter Cookies

The two main ingredients are oats and peanut butter. What can go wrong, right?!?! Add some honey for sweetness and coconut oil for some healthy fats and a little twist on both texture and taste. It is subtle, but worth the addition.

4-Ingredient No Bake Peanut Butter Cookies

One note, if you use fresh ground peanut butter then you might add a little salt to bring out the flavors of the peanut butter and honey. 1/4-1/2 tsp would be plenty, but gradually add until you are happy with the flavor. Check the ingredient label of your peanut butter to see if salt was added.

These can easily be made gluten-free. Use certified gluten-free rolled oats and you are good to go. Gluten free, baby!

Serves 10
Only four ingredients are needed to make these clean-eating no-bake cookies. The hardest part will be leaving them untouched in the refrigerator while they harden!

Ingredients
  1. 1 cup rolled oats
  2. 1/2 cup peanut butter*
  3. 1 Tbsp coconut oil
  4. 1 Tbsp raw honey
Instructions
  1. Line a cookie sheet with parchment paper.
  2. Combine peanut butter, coconut oil, and honey in a small saucepan over medium heat.
  3. Once melted, stir to combine. Add oats in 2-3 batches stirring to making sure the peanut butter mixture coats the oats entirely.
  4. While the mixture is still warm, drop onto the parchment paper in 10 even mounds.
  5. Refrigerate for at least 30 minutes.

  1. *If using fresh ground peanut butter then add salt to taste.
