The Denver Broncos are Super Bowl Champs!!!! We had a blast watching the Denver defense beat up on Cam Newton. Our defense is so bad ass!
We stopped by some friends of ours house before the game to hang out and play beer pong. I was Donny’s partner but he drank all the beer! We killed it too…. won four games in a row!
About an hour before kick-off we headed to my grandparents house to watch the game. It was a lot of fun and, like always, there was a shortage of food! Just kidding there was more food than we could handle! Man it was fun hanging out with friends and family and watching the Broncos just kick some A! I love it.
One of my favorite parts was also when Peyton Manning was making his speech and he said he was definitely going to be drinking some beers tonight! Rock on Peyton, you’ve earned it! I love that guy.
Anywhoooo……football season is over. What am I going to do on Sunday’s now?!?!
Create recipes? Ok.
Create thousands of different protein bite and energy bite recipes? Ok.
These protein bites are very similar to the energy bites that I’ve made before, but they are made with only protein powder and no other flours. It changes the texture a little bit compared to energy bites that have a chewiness due to the oats.
These bites are held together with cashew butter. You could definitely substitute with another nut butter, however the “cake” flavor is made by combining the chocolate with the cashew butter. It is an awesome combo!
I buy my cashew butter at Sprouts. They actually grind it themselves so you can buy raw, unsalted cashew butter for a decent price.
I also added cacao nibs to the mixture. You could substitute mini chocolate chips or omit all together if you don’t have cacao nibs. They are a little pricey at the store (those are also from Sprouts), but they last a very long time.
Warning: they are not sweet at all. In fact, on their own I think they are quite bitter and disgusting. Add them to something sweet and it completely changes the taste. It is basically cacao powder before it is ground up which makes it very bitter.
I used Vega Protein & Greens in chocolate, which is a plant-based protein. You could substitute with a whey protein and I’m sure they would be very similar. I have been wanting to try a plant-based protein powder for a while, but couldn’t commit. I have tried a few individual serving packets of some and they were not very good in my opinion. Then again, I mixed them with water only. Maybe they would be better with milk or in a smoothie. Either way, I ended up finding Vega at Walgreen’s (AND on sale) so I bought some to try. It is pretty good actually!

- 2 scoops chocolate protein powder (I used Vega Protein & Greens)
- 1/3 cup unsweetened applesauce
- 2 Tbsp cashew butter
- 2 Tbsp virgin coconut oil, unrefined
- 1 Tbsp honey
- 1/8 tsp salt
- 2 tsp cacao nibs
- In a small bowl, combine the cashew butter, coconut oil, and honey. Microwave until coconut oil is melted. Stir until all ingredients are well combined and runny. Pour into a small mixing bowl.
- Add the applesauce, protein powder, and salt to the mixing bowl. Stir until well combined and a dough forms. Add the cacao nibs and gently incorporate.
- Measure one tablespoon of dough and roll into a ball. Continue until all dough is used. Top bites with additional cacao nibs if desired. Refrigerate at least 10 minutes.
- Store protein bites in an airtight container or baggie in the refrigerator until ready to eat.
- Protein bites can be frozen for up to 3 months.
