Let’s just say that Donny is quite the lucky guy these days! We went to the Fort Morgan Elks Lodge on Friday night for a chance to win Broncos tickets to the game yesterday. We were hanging out with a few of our friends before the drawing and they have these “pull-tab” tickets that you buy to win money (same idea as a scratch ticket). Some are 25 cent winners, some $1 winners, and a few bigger prizes.
Donny ended up winning $150.00 on pull tabs! Then he won the Broncos tickets… all in one night! They do two other weekly money drawings and he was sure he would win those too. Thank goodness he didn’t or they wouldn’t have allowed him back!
We ended up getting rid of the tickets even though we really wanted to go. It was just not a good idea with Donny’s knee to do all that walking and standing. Oh well, we’ll go some other time!
So yesterday Donny went to town and while he was there he filled my car with gas (thank you for that, by the way). He bought a couple scratch tickets and won another $50.00! Where was this luck last week for the PowerBall?!?!?!?!
Hahahaha we should go up to Blackhawk and see just how lucky he is….
So clean eating doesn’t necessarily mean giving up everything you love. No one should have to live without their favorite foods. I’m a huge burger-lover and if I had to live without burgers forever then I would hate life.
With that being said, I do try to make my burgers a bit more healthy. These Hamburger Lettuce Wraps can be eaten in the lettuce cups or take the burger recipe and enjoy them on your favorite bun! Wheat germ (I used Kretschmer Original Toasted Wheat Germ) is combined with the egg to help bind all the ingredients together so the burgers don’t fall apart.
There are plenty of fun burger toppings out there and plenty of them are clean-eating approved. You could do the traditional cheddar, pickles, tomato, and mustard toppings. You could also try something creative and top the burgers with salsa, diced chiles, and cotija cheese! I chose to use bleu cheese because we had some on hand and a little goes a long way.
I personally think the best way to cook burgers is the flat-top griddle, but feel free to grill them or use a saute pan on the stove. Do whatever makes it the easiest for you!
- 1 lb extra lean ground hamburger
- 1 large egg
- 2 Tbsp wheat germ (I used Kretschmer Original Toasted)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Worcestershire
- 3/4 tsp black pepper, divided
- 3/4 tsp salt, divided
- 6 bibb lettuce cups
- Remove 4 lettuce leafs from the bibb lettuce, wash and allow to dry.
- In a medium mixing bowl, combine hamburger, egg, wheat germ, onion powder, Worcestershire, 1/2 tsp pepper, and 1/2 tsp salt. Mix until all ingredients are evenly distributed.
- Divide mixture into 6 even portions and shape into patties about 1/4 inch thick. Sprinkle with half the remaining salt and pepper.
- Heat a flat-top griddle to 350 degrees. Spray with nonstick cooking spray and lay patties salt-and-pepper side down. Sprinkle the remaining salt and pepper on the burgers.
- Cook burgers, turning once, until browned on both sides and no longer pink (about 8 minutes total).
- Place each burger in the middle of the lettuce leaf and add chosen toppings.
- Serve with any toppings of your choice including bleu cheese, cheddar cheese, mustard, pickles, tomatoes, etc.
- Whole wheat bread crumbs can be substituted for wheat germ. Almond flour or gluten free oat flour can be used if gluten free.
- Freeze any extra patties in Ziploc bags after they have cooled for up to 3 months.
