Watermelon-Honeydew Salad

Have you heard of Bountiful Baskets? It is a food coop program and you purchase a basket of fresh fruits and vegetables. You don’t know ahead of time what will come in the basket, but it is 50% fruit and 50% vegetables. I have bought one a few times now and I love them. In my basket I’ve had grapes, apples, oranges, pears, avocados, potatoes, squash, carrots, romaine, celery, green onions, bok choy, jicima, etc.

It is a lot of fresh produce for not very much money! You can pay a little more for all organic produce and they have “add-on” items as well. For example, I bought an extra 12-6oz containers of blueberries once! 

Some of the fun is getting random produce that you would never buy at the grocery store. We received bok choy in a basket recently, so I had Donny throw it on the grill to see how it would turn out. It was fantastic! I might have to make a recipe for it.

I bring this up because I bought one last week and picked it up Saturday. It had a watermelon and a honeydew in it! When I think about summer produce I think about sweet corn and fresh veggies from the garden, but I also immediately think of cantaloupe, watermelon, and honeydew! I love watermelon and sometimes cannot stop eating it…..

Instead of eating them separately, I decided to try the two together! I also tend to forget how much I like mint, but it is such a refreshing flavor. Mint and watermelon pair really well together. Safeway had a bundle of fresh mint so I bought the whole thing and then used the leftover in my water! I put sliced cucumber and mint in there, which is another good flavor combo!

Basically, once you dice up the watermelon and honeydew you are done with the salad — it is one of the easiest fruit salads! Can’t beat that. I definitely recommend adding the mint. Do not skip that part! It adds a great flavor to the fruit.

Serves 4
Honeydew and watermelon taste great on a hot, summer day. Add mint and lime to take this refreshing fruit combo to the next level!

Ingredients
  1. 1 cup watermelon, cubed
  2. 1 cup honeydew, cubed
  3. 1/8 tsp salt
  4. 1/2 tsp lime zest
  5. Juice of 1 lime
  6. 5-6 fresh mint leaves, chopped
Instructions
  1. Combine watermelon and honeydew in a small mixing bowl.
  2. Sprinkle with salt.
  3. Stir in lime zest, juice and mint. Serve chilled.

 Also, don’t forget that Father’s Day is on Sunday! We are getting together with Donny’s family during the day on Sunday and then going to my parent’s house for dinner. It’ll be a busy day of eating and relaxing… such a rough Sunday!

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
