Happy Monday! We have been crazy busy at work the last few weeks…well basically all of September! I finally got some much-needed R&R this last weekend. It was fantastic. Plus…. tomorrow is September 30th meaning it is almost October! I love October!!! I am pretty sure it is my favorite month of the year. Football is in full swing, the leaves start changing, it becomes completely appropriate to have pumpkin-flavored things at EVERY meal! Treadmill HIIT
I know I have announced my love of lifting several times and I still find strength training to be the best way to lose a few inches off the ol’ middle. However, I also do cardio on a weekly basis. I generally warm up with some type of cardio (elliptical, stair master, treadmill) before lifting, but I rarely spend more than 20 minutes doing so. Back-Abs-Calf Staggered Set
I am no personal trainer. In fact, I pay someone else to train me! On non-bootcamp days, if I choose to lift I will sometimes just use different moves that I have learned over the years and incorporate them into supersets or trisets. Another resource that I use to get some new and fresh moves is Oxygen magazine. I have a subscription for the print version and I love the content. Turkey Meatballs
We definitely live in beef country here in northeast Colorado, but I happened to have turkey on hand! You could make this recipe using lean ground beef or even ground chicken.
I was craving spaghetti and meatballs for dinner so I headed to Pinterest to find some recipes to start with. Strong is the new skinny….to get strong you need to lift weights. Lifting weights will not make you bulk up…it will make you lean and of course, strong! My goal is not to be stick thin. Mediterranean Chicken Pizza
The USDA did a study on pizza consumption and well, they found out that Americans eat a lot of pizza. Is anyone shocked by this?! I for one, am not. I love pizza. I would much rather make my own so that I know exactly what is in it. Donny & I threw this pizza together rather quickly the other night. We cheated and bought an already-made whole wheat pizza crust from Target. Probably not the healthiest crust ever, but definitely not the worst either. Smoked Chicken Lettuce Wraps
This is by far one of my favorite meals and it also happens to be one of the easiest! Perfect. Lettuce wraps are so refreshing and they can be made using whatever ingredients you already have. You can even use leftovers from a different meal to make these. I am telling you, the possibilities are endless.
Donny & I got the idea to make our own lettuce wraps after we ate at La Sandia Cantina in Denver. It is one of Richard Sandoval’s many restaurants and he really caters to gluten free. You can get tacos and fajitas in lettuce wraps instead of tortillas. They are amazing! [Read more…]
