Did you enjoy the beautiful Colorado weather yesterday?!?! It was crazy nice out! I made sure to spend plenty of time outside enjoying it. I went to the grocery store first thing and then Donny had the grill started by the time I got back. He grilled up a bunch of food for me for the week and I got my meal prep out of the way before noon!
I took the dogs outside for a while. We think we found where Kevin got out, so we fixed it up over there and hopefully he can’t get out again. Both Saturday & Sunday I let the dogs out and didn’t have Kevin on a leash. I went out there with them and supervised, but he was still off the leash!
My sister came out and we went on a walk outside for a little bit. After that I came home to read. I am finding it very difficult to put down my book club book, The Nightingale! It is so good!!! So I decided to let the doggies play outside while I read out on the back patio. It pretty much turned into a cuddle-fest on our patio furniture and I didn’t mind at all. It was beautiful out!
A few hours later my mom and I went on another walk later in the afternoon, so I got quite a bit of time out there today! It was fantastic.

These particular energy bites are loaded with raisins, almonds, peanut butter, and chocolate chips…..the perfect combination of trail mix ingredients! You could sub the chocolate chips for M&Ms if you were feeling sassy!
Each bite is around 100 calories and has that sweet-salty combo that I love. There is a good mix of carbs and healthy fats, plus a little protein in there too.
Mix all the ingredients together and roll into balls. It is pretty much that simple. They can always be made using whatever ingredients you have on hand or whatever ingredient you prefer in your trail mix! I am a chocolate-nut-dried fruit gal. Others prefer dried fruit only or maybe you are a nut-only type! These can be made with whatever you are craving.
Another tip, if I have a bunch of energy bites that I know I won’t get through, then I freeze some. It works really well, plus you will always have a small sweet bite available for when your sweet tooth kicks in. This way, you can satisfy that sweet tooth without feeling guilty about what you are eating!
- 1 cup oats
- 1/2 cup peanut butter
- 1/4 cup honey
- 1/4 cup almond flour
- 1/4 tsp salt
- 2 Tbsp raisins
- 2 Tbsp almonds, sliced
- 2 Tbsp chocolate chips
- 2 Tbsp unsweetened coconut, shredded
- In a small mixing bowl, combine the honey and peanut butter. Add the oats, almond flour and salt to the bowl and stir until well combined. A soft dough should form.
- Add the raisins, almonds, chocolate chips, and coconut and incorporate into the dough.
- Measure 1 Tbsp of dough and roll into a ball. Continue until all dough has been used.
- Store energy bites in an airtight container or baggie in the refrigerator. Bites can also be frozen for up to 3 months.
- Substitute any of the additional mix-ins with your favorite trail mix ingredients.
