Single-Serving Blueberry-Peach French Toast

Blueberry Peach French Toast

 I have really been kicking my own butt in the gym this week! Since we are off of bootcamp for a week I decided to change up my workout routine a little bit. I am lifting more days per week than usual and focusing on certain body parts each day. For example, Monday was legs, Tuesday was chest and triceps, etc. It has me so. dang. sore.

What really got me sore was on Monday I did a pretty big leg workout and did glute-ham raises as one of my exercises and I know those get my hamstrings super sore. I also did a pretty killer chest and tricep workout on Tuesday. I’ll have to post that later but I incorporated drop sets into the chest workout – which I loved!

 Want to know what else I love?! Combining peach and blueberries. Last fall we bought a box of Palisade peaches from the 4-H club (Donny’s mom is pretty involved with 4-H). They are the best peaches…. so juicy and flavorful. So a box is not 4 or 5 peaches….it is a ton of peaches! We ate as many as we could for a few days and then I peeled and sliced the remaining peaches and put them in the freezer.

I am so glad I did that because then in the middle of winter I can enjoy that wonderful peach flavor again. We also bought 12 pints or so of blueberries from Bountiful Baskets. As much as I eat blueberries I did not get through all 12 pints so I froze those as well.

 I love this recipe because it is really easy to make and keeps breakfast (or dinner….) not quite so boring! I tend to get in a rut of oatmeal, smoothie, egg & toast, oatmeal, smoothie, eggs & toast…. this is a lot of the same ingredients as eggs and toast, but definitely different flavors!

 This recipe serves one but you could easily use this same concept for multiple people, it just takes a little longer. Also feel free to change up some of the toppings. Any frozen fruit mixture will do and also think about adding walnuts, pecans, pepitas, chia, coconut (shredded or butter), almond butter, etc.

 The bread that I used is Ezekiel bread (Food for Life Ezekiel 4:9 Low Sodium Sprouted Whole Grain Bread), which is awesome if you haven’t tried it. It is sprouted and is placed in the freezer section of Safeway (by the Morningstar products). I have tried a few different sprouted grain breads, but this might be the only one you can get in town.

Breakfast for one doesn't have to be boring! Peach & Blueberry make a wonderful flavor combination to enjoy on top of French toast... no syrup needed!

Ingredients
  1. 2 slices of bread (I used Food for Life Ezekiel 4:9 Low Sodium Sprouted Whole Grain)
  2. 2 egg whites
  3. 1/2 tsp vanilla extract
  4. 1 tsp unsweetened almond milk
  5. dash of cinnamon (optional)
  6. 1/4 c frozen blueberries
  7. 1/4 c frozen peaches
  8. 2 Tbsp sliced almonds
  9. Non-stick cooking spray
Instructions
  1. In a small bowl combine egg whites, vanilla extract, almond milk, and cinnamon. Set aside.
  2. In a small microwave-safe dish, combine the frozen blueberries and frozen peaches. Defrost in the microwave (settings vary based on microwave).
  3. Place a 10- or 12-inch skillet on the stove over medium heat. Spray with non-stick cooking spray.
  4. Once the pan is heated, dip the bread in the egg mixture (one at a time) making sure both sides have been soaked.
  5. Once both pieces of bread have been soaked, transfer the bread to the skillet. Cook until golden brown, then flip to cook each on the other side.
  6. While the toast is cooking in the skillet, microwave the blueberry-peach mixture until warm.
  7. Pour the blueberry-peach mixture over the toast, top with sliced almonds, and enjoy!
Notes
  1. If the fruit was not ripe when it was frozen then add a little stevia or sweetener of choice to the fruit while heating up.
  2. Other topping options: shredded coconut, almond butter, honey, agave, other nuts/seeds, etc.

      They do! I use to have to buy it at Sprouts and then one day I found it in the freezer section and was so excited! I also just tried Dave’s Killer Bread and it is awesome too!
