It is Christmas week!!! I had a huge sigh of relief Saturday afternoon when our Christmas Capital of the Plains events wrapped up. It is fun to do the events but it is a month long promotion that takes a lot of time! It is nice to have it over.
Our ice sculpting competition was awesome. Most of the teams had competed before and I felt like the sculptures were better this year than any other year. Check out Christmas Capital of the Plains on Facebook for pictures of the sculptures.
Do you have a busy week getting ready for the holidays? Or are you pretty relaxed about it all? We are pretty low-key this year due to Donny’s knee. We have family staying over next weekend so we’ll have a full house! We have 5 beds in our house and this might be the first time they have ever all been filled at the same time. We’ll have 10 people staying here total, including four kiddos!

This Oatmeal with Avocado & Fried Egg recipe can be made in less than ten minutes and it is loaded with healthy ingredients. Both fiber from the oats and healthy fats from the egg and avocado keep you feeling full all morning long. Whip up a batch of this oatmeal and you’ll be satisfied until lunch. You’ll be able to get your holiday to-do list done in the morning and still have time to relax in the afternoon (in a perfect world right)!
At first, I wasn’t 100% sold on the idea of savory oatmeal until I tried the Savory Oat Cake with Fried Egg. I am now forever open to trying savory oats. The oat cake needs some refrigerator time so for a quick version using similar flavors try this savory oatmeal instead. My other go-to breakfast combines avocado & eggs too. Try the Fried Eggs over Avocado Toast.
I love the combination of oatmeal, red pepper flakes, and salt. It is fantastic! Add avocado and it is a game-changer. I prefer my eggs to be runny, so I cook my eggs over-easy. You could make this same recipe with any variety of eggs including over-medium, scrambled, poached, etc.
- 1/3 cup quick oats
- 2/3 cup water
- 1 large egg
- 1 oz avocado, diced
- 1/2 tsp red pepper flakes
- 1/4 tsp salt
- Spray a small skillet with non-stick cooking spray. Cook egg over medium heat to desired doneness.
- While the egg cooks, combine water and oats in a microwave-safe bowl. Cook according to package directions. When the oats are fully cooked, add the red pepper flakes and salt. Stir to combine.
- Top oats with diced avocado and fried egg. Serve immediately.
- Rolled oats can be substituted for quick oats and cooked on the stovetop. Preparation time will vary.
- The egg can be cooked any way you would like, including scrambled, poached, over-medium, etc. Cook time may vary.
