Grocery Shopping is one of my favorite things to do, I won’t lie. I really enjoy it. I know a lot of people HATE grocery shopping and find it difficult to decide what to buy for a clean diet. Well I am here to help! Each week I document what I purchase so you can get a good idea of what I buy when I grocery shop. I also explain how I prep my foods each week, so that I have healthy and convenient foods available. Clean eating doesn’t have to be difficult, but it definitely takes some planning. Donny had a catering job to do Saturday night. He bought a package of 60 eggs to use and didn’t quite get through all of them. I didn’t end up needing to buy eggs for this week or any mixed greens. Both were leftover from catering. I love when that happens!
Grocery Shopping:
Here is what I bought this week while grocery shopping:
- 20oz ground turkey (93% lean)
- 3lbs boneless, skinless chicken breasts
- 1lb frozen cod fillets
- 2% Fage Greek yogurt
- 2 Elli Quark (strawberry)
- 505 Green Chile (medium) & 505 chunky salsa
- 1 jar sliced peppercinis
- 1 can pitted black olive (large)
- Bibb lettuce, zucchini, green beans, mustard greens, broccoli, broccoli slaw, red onion, grape tomatoes
- lemons, avocados, blueberries, raspberries, bananas
Meal Prep:
I spent quite a bit of time in the kitchen on Sunday. Donny went golfing but promised to grill whatever I needed after he was done. I decided to make a few things while he was gone.
I started with a frittata to take for my mid-morning meal each day. I sautéed mustard greens, tomatoes, and some Italian chicken sausage (with the casings removed). I whisked together 15 egg whites and 5 large eggs. I poured that in and let the bottom set. I baked the frittata for 20 minutes at 350°. So simple and really delicious. After that, I decided to make a pasta salad. I cooked some red lentil pasta then added peppercinis, black olives, red onion, and blanched broccoli. I made some homemade Italian dressing by combining olive oil, red wine vinegar, Italian seasoning, garlic salt, and pepper. It was really easy to make and delicious! I added 1/4 cup dressing to the pasta salad and mixed it all together. I felt like it needed a little more flavor so I added some more salt and more Italian seasoning to the salad. It is really good!
I made some turkey burgers as well. I mixed together ground turkey, one egg, almond flour, Worcestershire, salt, and pepper. I formed that into patties and cooked them on a flat-top griddle. They were a little mushy and didn’t have the texture like ground beef. I don’t know if it was the brand of turkey or if I needed a little more almond flour. They cooked up just fine, but it would be hard to grill them.
Donny grilled a bunch of food for me. He grilled the chicken breasts and cod that was wrapped in foil packets. He also grilled zucchini, green beans, broccoli, carrots, bell peppers, and sweet potatoes.
He served filet mignon for his catering job the other night so he had some leftover trimmings that needed to be cooked. He ended up grilling those too for the week for us. We had also had some takeout the other night and I had leftover brown rice to use.
That was everything that I prepped this week. We have a ton of meat leftover in the fridge, both chicken and beef. We have a few veggies and a lot of sweet potatoes to use as well. I made a huge batch of that pasta salad so we will be eating that for this week too!
