Grocery Shopping & Meal Prep

I was up rather early on Sunday morning. I woke up to let the dogs out (yes, I admit it – it was me…..) and I couldn’t go back to sleep. I had a busy day ahead of me and wanted to get my meal prep done, so that might have been part of my restlessness. I was going to a baby shower and wanted to make the mother-to-be some gluten free chocolate chip banana bread! She has to eat gluten free for health reasons so I like baking things for her. It gives me a reason to bake AND it lets me practice with different gluten-free ingredients. Plus, she loves treats!

I made that first thing, then started prepping veggies so they were ready when Donny was ready to cook. It is so nice to have him grill for me because it keeps the kitchen a lot more clean and it allows me to get other things ready while he is cooking outside. I definitely prefer it, but maybe that is because then it means he is actually home! Either way…..

Here is my Grocery Shopping & Meal Prep list. Tomorrow I will have a more detailed account of what I ate in my next Day in the Life posts. I can already tell you that my mid-morning snack in bombdigity!

Grocery Shopping:

I didn’t need too many things this week, mostly produce. I pulled 5lbs of pork tenderloin out of the freezer and also those two chicken breasts that I froze last week. Otherwise here is what I bought at the store:

  • 3.5lbs boneless, skinless chicken thighs
  • 1lb frozen cod fillets
  • 18 eggs
  • 2% Fage Greek yogurt
  • 1% cottage cheese
  • green beans, Brussels sprouts, broccoli, and large carrots
  • avocados, bananas, strawberries, and lemons
  • 1 basil plant

Meal Prep:

I literally had Donny grill pretty much all my food! Again, it is so much cleaner to have him do that and it frees me up to make other things! I don’t mind cooking everything inside, but the grill is awesome. I should have him teach me how to grill for when he is gone… hmmmmm……

I had him grill both chicken breasts (they were gigantic, by the way), both pork tenderloins, and the chicken thighs.

I cooked the cod in foil packets again, but this time on the grill rather than in the oven. I seasoned it with salt and Mrs. Dash Salt-Free Garlic & Herb seasoning….this might be might favorite seasoning that I have right now for fish. It is delicious!

I chopped up all the veggies, put them in bowls, and lined them up for Donny to cook in whatever order worked for him. He grilled Brussels sprouts, green beans, bell peppers, broccoli, carrots and asparagus. We have a grill basket that he throws the veggies in to keep them all contained. I was in a rush (I had that baby shower to get to) so I forgot to take pictures of some of the veggies. My bad….

I wanted to use pineapple in my mid-morning snack so I had him grill whatever was leftover from that (which was a LOT) so we could use it later this week. I LOVE grilled pineapple. Yum!

As Donny was grilling, I was making my mid-morning snack. I mixed Greek yogurt with a little protein powder then topped it with pineapple, strawberries, and banana. I crushed up some peanuts and put some in baggies to sprinkle on top. My thought was going towards “banana split” flavors, but I didn’t add the chocolate. It is a fantastic snack, in case you were wondering!

I had a ton of extra food for the week. Donny is home the entire week, so that is why I bought extra chicken thighs and cooked so many vegetables. I love having these extra cooked vegetables in the fridge so I can add them to a omelet/scramble for breakfast or make some sort of bowl for dinner. It makes it super easy to throw together a quick, yet healthy meal. I won’t let them go to waste, that’s for sure!

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
