Grocery shopping and meal prep this week was SUPER simple! I’m talking it took me one hour max. We were in New Orleans, LA from Friday night to Tuesday around noon, so not a ton of time for my usual shopping trip and meal prep schedule.
No worries though, I planned to make a few of my go-to meals for the week that are easy to make and take very little time. I only needed to make three days worth of meals so that helped too.
One thing you’ll notice is that I didn’t prepare any meat this week. If we have leftover meat in the refrigerator that I don’t think we will get to, then I freeze it in baggies so Donny & I to grab if we get home late or for times like this.
Each day this week I’ll grab a baggie of chicken, pork or a hamburger from the freezer (all pre-cooked) and let it thaw in my lunch bag. Less food waste and really convenient at times!

Grocery Shopping:
- romaine hearts, sugar snap peas, green beans, broccoli/cauliflower mix, zucchini, cucumber, shredded red cabbage, green onion, cherry tomatoes and mini bell peppers
- raspberries, bananas and avocados
- eggs
- 2% Greek yogurt
Meal Prep:
The first thing I did for meal prep was put the vegetables I was going to cook into the oven at 350°. I roasted zucchini, green beans, carrots, broccoli and cauliflower all at the same time for 30 minutes. Safeway has some great vegetables to choose from that are somewhat prepared, such as the green beans and the broccoli/cauliflower mix. I literally opened each bag and spread the contents out on the baking sheet. Easy peasy.
While those vegetables roasted I made chopped salads. Each one included shredded romaine, red cabbage, chopped sugar snap peas, cucumber and bell pepper.
Last but not least, I made three yogurt parfaits with 2% Greek yogurt, protein powder, raspberries, banana and almond butter. Quick and easy, yet delicious.
Honestly that was all I did for the rest of the week. Again, I have pork, chicken and hamburgers to choose from in the freezer that are already cooked. Each day I will choose what I want to eat and let those thaw in my lunch bag.
