Meal prep this week was non-existent. Honestly, I didn’t do anything. I didn’t have time to even come up with meal prep ideas, let alone cook anything.
Donny & I were on vacation and flew back to Colorado on Monday. We were suppose to land around 4:30pm, but our flight was delayed a couple hours. We didn’t get home until after 9:00pm…yuck!
Rather than cooking anything I bought some convenience foods and threw together some meals to get me through the week.
Based on our vacation schedule, I knew I would buy some convenient food items to make during meal prep this week, but I didn’t realize I wouldn’t have time to go to the grocery store period! Instead of going Monday night, I actually went after the gym Tuesday morning. I was in and out in about 10 minutes with enough food to throw together a few days worth of healthy eating.
Use some of these meal prep ideas for weeks that are extremely hectic or on days that just don’t go as planned.
Grocery Shopping:
- shredded chicken breast from the frozen food section
- eggs
- Minute ready-to-serve brown rice
- two steam bags of broccoli-cauliflower mix
- avocado and banana
- 7oz containers of 2% Greek yogurt
Meal Prep Ideas:
Since there wasn’t time to cook any meals I bought food that was already cooked. Not the most clean, but it will do this week.
I bought some frozen, shredded chicken to have for lunch or dinner or both throughout the week. There are several different choices in the frozen section, but the shredded was on sale.
I also bought the frozen broccoli-cauliflower mix that came in a steam bag. While I was getting breakfast ready on Tuesday morning I popped one in and let it cook. It took less than ten minutes to cook both bags and I had veggies for four meals or so. Easy peasy.
Brown rice is very versatile, plus full of fiber! It is one of my favorite grains to keep around and I bought some Ready to Serve Minute brown rice to eat this week. It is ready in 60 seconds! Whhhaaaaaattt? Awesome.
Luckily last week I made some mini egg frittatas that I put in the freezer. I figured I wouldn’t want to cook much, but it turned out that I didn’t actually have time to cook. Having these in the freezer was great!
Honestly that was it this week. I will pack some protein powder to mix into the Greek yogurt and pack individual bags of toppings, but other than that I didn’t meal prep anything else.
I have a million meal prep ideas, but sometimes there is simply no time. Holidays get especially busy so sometimes it is nice to have convenient food that can be ready in no time!
