Eggs are one of my favorite foods. I would even venture to say that eggs fall in my top 5 favorite foods. I eat them at least 3 times a week for breakfast, occasionally have them for a snack, and once in a while I will each breakfast for dinner or have an egg with some type of dinner. One of my favorite things to have an egg on is pizza. No, not breakfast pizza, a homemade vegetable or meat pizza with a fried egg on top. Yum!
Eggs are so versatile and super healthy for you. And in case you are wondering, yes, I eat the yolks! Eggs are one of the most nutrient-dense foods there are. At 70 calories per egg, they are full of protein and important nutrients that you need daily. Eggs are a good source of folate, phosphorus, vitamin A, and several B vitamins, including vitamin B5, vitamin B12, and vitamin B2. Egg whites are a great source of protein, but don’t have the nutrients that the yolk does. Now don’t get me wrong, I do occasionally just use the white. For example, if I make an omelet then I use one whole egg and three egg whites…. but there is at least one whole egg in there!
Eggs got a bad rap a while ago for being high in cholesterol. They do have cholesterol, but unless you have problems with high cholesterol then you don’t need to worry about consuming eggs. Eating foods with cholesterol does not actually cause high cholesterol. Some risk factors of high cholesterol are actually smoking, obesity, poor diet, large waist circumference, etc.
Eggs can be eaten at any time (see paragraph 1), but they are generally associated with breakfast. They can be cooked a variety of ways: hardboiled, softboiled, poached, scrambled, fried, baked, you can even microwave an egg! I generally fry my eggs over-easy in the morning because I like the runny yolk. This same breakfast can be made with an over-medium or over-hard fried eggs.
It is so easy I cannot even call this a recipe. You fry the eggs over medium heat. As those are cooking, put your bread in the toaster. Once the bread is toasted to your liking, evenly spread smashed avocado on the bread. Once the eggs are done, slide them over the avocado toast. Done. I put a tiny bit of salt and some pepper on my eggs while they are cooking. I also top mine with Chalula (not to change subjects but Donny & I keep forgetting to buy Chalula and Safeway has not been carrying it… all I am saying is that I am having Chalula-withdrawals…that’s a real thing, right?!). It takes very little time to prepare this breakfast and it is full of healthy fats and protein. The bread I like to eat is either the Food for Life Ezekiel 4:9 bread (I buy the low sodium but any will do) or I buy Alvarado Street Bakery Organic Essential Flax Seed Bread.
To change things up with this meal every once in a while you could top it with salsa or add sliced turkey or ham under the eggs. To me, the best part is the eggs running over the sides and letting the bread soak up some of it. If you don’t like runny eggs then, again, you could cook them longer, scramble them or even make an omelette and put that on top of the avocado toast. Get crazy!!!
