Vacation and getting delayed coming home threw off my clean eating meal schedule for this week. I made it work, but it definitely didn’t go as planned. Plus, forgetting my afternoon snack in the freezer didn’t help either!
This was not my favorite way to get back to clean eating meals after vacation, but it was fine. I didn’t have very many vegetables throughout the day, but I managed to hit my goals regardless. I typically like to have more food throughout the day and not quite as big of a meal at dinner, however life doesn’t always go as planned. Luckily, I keep plenty of healthy snacks with me for times like this.
Check out what clean eating meals I had this week. I had 6 liters of water throughout the day, which is pretty typical of me once I get back from a vacation or indulgent weekend.
4:30am – Pre-Workout:
It was the morning after getting back from vacation and I woke up thirsty. Traveling in general makes me dehydrated and we consumed quite a bit of alcohol on this trip (surprise, surprise)!
I started the day with 1 liter of water. I mixed half with my pre-workout supplement, MusclePharm Assault which helps with focus and endurance during training. Personally I like the fruit punch flavor, but they make other flavors as well. I drank the other half of the liter plain.
To give me a little protein before my workout (and due to lack of food in my refrigerator) I had 1/4c 1% cottage cheese mixed with 3-4 drops Vanilla Crème liquid stevia and cinnamon.
6:45am – Meal #1:
Breakfast was a bowl of hot protein oats. After traveling for 5 days I was definitely in need of a clean eating meal to start the day!
I whipped two egg whites then mixed them with 1/3c quick oats and 2/3c water. I microwaved that on high for 2 minutes until the eggs and oats were cooked. Once that cooled slightly, I mixed in part of a scoop of MusclePharm Isolate protein (vanilla). I mixed the rest of the scoop of protein with water and drank that on the side.
On top of the oats I had 30g sliced banana, 3/4Tbsp cashew butter, 1/2Tbsp unsweetened shredded coconut and 2 small dates chopped. It was a particularly awesome combination if I do say so myself! Cashew butter and dates are the bombdigity!

9:45am – Meal #2:
My day of clean eating meals did not go as planned. I forgot to pack my mini egg frittatas out of the freezer to put in my lunch box! Luckily I had packed yogurt with some toppings to eat as my afternoon meal. I had one 7oz container of 2% Greek yogurt and mixed it with 1/3 scoop MusclePharm Isolate protein (vanilla). On top I put 1/4c puffed kamut cereal (similar to puffed brown rice cereal) and 1Tbsp pepitas.

12:30pm – Meal #3:
Since zero meal prep took place over the weekend I decided to take some frozen soup for lunch. I made a batch of my White Chicken Chili with Sweet Potatoes and kept some in baggies in the freezer. Each one was portioned out into one cup servings – perfect to grab and go!
On the side I had 100g broccoli and 100g cauliflower from a steam bag in the frozen food section.

3:30pm – Meal #4:
I had intended to go home during lunch and grab my mini egg frittatas but I got so busy that I never left for lunch, let alone left to go get a snack! Luckily I had a Quest bar in my purse from vacation. I ended up eating 1 Oreo Quest bar at my desk, rather than skipping the meal all together.

6:30pm – Meal #5:
I worked late trying to catch up from being gone, so Donny threw together dinner with things we had on hand! He cooked up a sirloin steak, sprouted corn grits and roasted carrots with some Indian seasons. It was delicious!
I had 4.25oz steak, 50g carrot and about 1/2c grits (measured cooked). I still needed more fats, but I didn’t have room for any more protein or carbs so we added butter to the grits! I’m not mad about that choice at all…they were delicious. I also had 3oz of red wine with dinner. Honestly, I try not to drink alcohol after getting back from an indulgent vacation, but Donny had a bottle open and ready so I had a little!

Sometimes clean eating meals are simple and take only a few minutes to throw together. I enjoy taking time to make clean eating meals on the weekend, but sometimes that just doesn’t happen!
