Creamy Avocado & Orange Salad

Have you seen the movie Lawless? Donny & I started it last night as we were going to bed. It is by no means a horror film, but it is pretty intense and has some very graphic/bloody scenes. Those scenes get me pretty scared!

I had watched Lawless a couple years ago and it didn’t bother me. I actually really like movies like that and I actually do enjoy that film. However, for some reason I watched about 20 minutes of the movie before falling asleep and then I kept having bad dreams about it! I woke up a little scared and realize it was just because of the movie and go back to sleep. I did that probably 3-4 times last night…… Silly movie. I felt 6-years-old again watching Are You Afraid of the Dark with my sister in our living room growing up. Yikes.

So what did I suggest Donny & I watch tonight?! Yep, Lawless. I have to finish it! If you haven’t heard of it, it is from 2012 and has Shia LeBeouf, Tom Hardy, Guy Pearce, and Jessica Chastain in it… so a great cast! The film follows three brothers that are bootleggers during prohibition. If you haven’t seen it then I do suggest watching it, maybe just not right before bed if you get scared like me!

Anyway, enough about me being a scaredy cat…..let’s talk food! Orange and avocado is a surprisingly good combination. This recipe has very few ingredients too… four to be exact (five if you count salt).

By mixing the orange with the avocado for a little bit (gently, not too vigorously) the avocado creates a nice coating over the orange. It seems creamy without needing to add actual cream or yogurt or anything else.

Avocado is awesome…have I mentioned that before? It is definitely one of my favorite foods.

One trick if you need diced avocado is to cut it in half first, then dice it all while it is still in the skin. Start by slicing the fruit up-and-down, then go back and slice it back-and-forth, making a grid-like pattern. Be sure you do not cut through the skin and puncture your hand (that would be bad news!). You can faintly see the grid pattern on the avocado half pictured above. Finally, take a spoon and scoop the diced avocado into a bowl. Voila, you have diced avocado!

I enjoy this salad as a side dish, but you could mix in some grains, such as quinoa, farrow, or brown rice for something more filling. It would also be awesome over a bed of greens, such as spinach. Throw some protein in the mix and you have lunch!

This no-cook recipe has very few ingredients and can be whipped up in no time! Avocado and orange are combined in this side dish that can be served with your favorite grain, over greens, or all by itself!

Ingredients
  1. 2 medium oranges,
  2. 2 small ripe avocados, diced
  3. 1/2 tsp extra virgin olive oil
  4. 1/4 tsp salt
  5. 1/4 tsp orange zest
Instructions
  1. Peel the oranges. Slice and quarter them, then place in a small mixing bowl.
  2. Mix the olive oil, salt, and zest with the orange slices.
  3. Add the avocado to the bowl and mix well. The avocado should form a coating over the orange slices, but not completely break down.
Notes
  1. For a less creamy salad, gently fold in the avocado instead of mixing thoroughly.

I thawed some frozen mixed veggies, heated an Uncle Ben’s Ready Whole Grain Medley package and diced/heated some chicken that I made during meal prep up. Threw all that in a bowl with some Mrs Dash Onion & Herb Salt-Free seasoning and boom, dinner! Plus it has 33g protein and only 350 calories
